Leftover Cheesy Broccoli & Noodles (non-crock)

We had left over Elbow Noodles (a bunch) & needed to do something with them. Couldn't put them in the crockpot for fear of making them mushy. So I grabbed 2 bags of frozen broccoli & 1/2 block of Velveeta. Mixed that together, and cooked in the oven. 

I'm guessing I had about a ::

1 lb of Cooked Elbow Noodles
2 -16 oz of Frozen Broccoli (whole)
1/2 a block of Velveeta
1/2 of choice shredded cheese

Seasonings I used to desired amount:
garlic & onion powder
salt & pepper

I melted the Velveeta first as I laid the cooked macaroni & broccoli in the pan. Went ahead & seasoned them before I poured the Velveeta on top. I mixed it up. Then covered the mixture with Shredded Cheese.
Cooked on 375 for 35 minutes.




Finally got my 5 year old to eat so you know it was good.

Velveeta's Broccoli Cheese Soup

This one is obviously borrowed.


2 tbsp.  butter or margarine
2 tbsp.  flour
3 cups  milk
Whole Block of Velveeta, cut into cubes
1 pkg.  (10 oz.) frozen chopped broccoli, cooked, drained
1/4 tsp. salt
1/4 tsp.  pepper
 
Melt Velveeta in pot while preparing broccoli on High. I chopped up the broccoli as much as possible & tossed them in. Then add the rest. Then turn on low. Cook until all of the Velveeta is melted then enjoy! 

You could add cream cheese & onions to it for more flavor but this above tasted just fine.

Beef & Noodles

Here's another one. Finally got up and cooking again. 

Beef & Noodles. 

3lbs of Cubed Beef. 
1lb of Noodles. (Un-Cooked)
2 Cans of Chicken Broth
2 Cans of Cream of Chicken
Plus your choice of seasonings. I used a packet of Beef Marinade. 

Put on low for 5-6 hours & enjoy.

Whole Chicken


I found a different way of doing this. I can't remember which site I got this idea from. But take some foil & make balls & flatten it.  Depending on how big the chicken is you may have to flatten it more



Onion Powder
Garlic Powder
Thyme
Poultry Seasoning
Tony's


I have no measurements, I used as much as I thought was needed. So just a pinch here, pinch there until you think it's too your liking. 

This is going to take 7-8 Hours. 
Cook on High for 2 Hours then Switch to Low for 5-6 Hours

Ranch Pork Chops

5 Boneless Pork Chops
2- Cream of Chicken (plus 2 cans of water)
2 Packets of Hidden Valley Ranch Mix

Mix the Cream of Chicken & Ranch Mix together. Then Add the Pork Chops. Make sure most of each chop is covered. 

Cook on Low for 4-6 Hours.

BBQ/Root Beer Rub Shoulder Roast


4lbs Shoulder Roast
Dry Rub (shown below)
1/2 Cup BBQ Sauce
1 Can of Root Beer


The Dry Rub:

3 tablespoons brown sugar
3 tablespoons sweet paprika
1 1/2 tablespoons black pepper
1 tablespoon celery salt
1 tablespoon garlic powder
2 teaspoons onion powder
2 teaspoons chili powder
2 teaspoons dried oregano
1 teaspoon cayenne
1 teaspoon salt
1 teaspoon ground coriander
1/4 teaspoon ground cinnamon

Mix together the spices for the rub in a bowl & rub all over the shoulder. Top, bottom, sides, etc. Place into Crock. Turn on High.
In a separate bowl, mix together BBQ Sauce & Root Beer. Pour into a measuring cup or something with a spout & carefully not touching the roast (don't rinse off spices) Pour in the BBQ Sauce & Root Beer mixture. 

Cook on High for 4-6 Hours, OR Low 8 Hours. 







It does have a spicy kick to it. So if your not into too much spice just cut back on it, it will taste just fine.

Brown Sugar Balsamic Chicken

8 Chicken Breasts
2 Tablespoons of Sage
1 Teaspoon of Salt & Pepper
Crushed Garlic Clove
2 Tablespoons of Flour
1 Cup of Brown Sugar
1 Cup of Water
1/2 Cup Balsamic Vinegar
1 Tablespoon Soy Sauce

Pour all liquid in Crockpot & Turn on High

Coat the Chicken in Dry Spices & place in pot. 

Cook on High for 3-4 Hours or Low 6-7 Hours

Beef Tip Roast




5-1/2 lbs of Boneless Beef Tip Roast
1/4 cup brown sugar
4 tsp Italian Seasoning
McCormick Slow Cookers-Savory Pot Roast Seasoning Mix
1 Can Bud Light (or choice of Beer)

Pour the beer over the top of the Roast. Mix seasonings & rub/sprinkle over top. 

Cook on Low for 10-12 hours OR High 5-6 hours. 

**during cooking I turned to make all sides the same color**

Shred beef & either use for sandwiches or eat alone.

Hamburger Soup

I made this soup & attempted to take it to my mother in laws for everyone to eat since there's about 6-7 people that live there. Plus my oldest son Hayden which has been staying over there the past few nights.
I put it in a tupperware container so I wouldn't have to bring the crockpot. Half way out of the neighborhood, I turn a corner & spill it all over the passenger side of the truck & Spencer's leg. Yup, it was still steamy hot. Managed not to burn him but his leg is sore. There was enough for Spencer & me to eat.

Hamburger Soup

3 lbs ground beef
2 cups baby carrots
1-1/2 cut up celery
1 cup minced onion. (I cut up into slices, & placed into a small blender)
6 cups bouillon OR broth
2-6 oz tomato paste
4 tsp Worecestershire Sauce

Place Browned Meat, carrots, celery & onion into pot. 
Combine tomato paste, Worecestershire, & Broth & Add to pot. 
Stir. 
Cook on Low 6 to 8 hours, OR High 3 to 4. 

Unfortunately since I spilled it, I did not get a photo. But the part that we did mangage to eat, it was good.

Italian & Cream Cheese Chicken & Noodles


This meal I planned for 10 people. It was barely enough. About 3 scoops per adult, and 2 scoops per kid. I had made this for my MIL & everyone in the house. They wanted seconds but thankfully we had cake to fill the hole.



5 pieces of Boneless Skinless Chicken Breasts--Cubed
Italian Seasoning --- Desired amount
1 tablespoon of butter
1 diced Oinion
1 diced Garlic Glove
1/2 Cup of Chicken Broth
8oz package of Cream Cheese
1 Can of Cream of Chicken
1 package of Egg Noodles
Pam Cooking Spray

Cut up the Chicken. I still did it while it was a little frozen to make it easier. Covered it in Italian Seasoning. I mixed it together in a bowl.
Spray the Crockpot with Cooking Spray & Add Chicken
I cooked for 3 hours on High. Stiring often. 
Now what I did when the 3 hours were up I turned it on low while I made the sauce. 
On the stove top, melt butter & sauté onion & garlic. Add soup, cream cheese  & broth. Stir until smooth.
Add sauce from stove & add to crockpot with chicken. Mix/Stir. Turn back to High & cook for an extra hour. 

Either serve on top of egg noodles or right before serving add noodles to pot & mix together.

Brown Sugar Ham

1-1/2 cups packed brown sugar
4 lb cured-Ham
1/2 cup water

The first cup of brown sugar on bottom of pot, then place ham flat side down. Rub remaining brown sugar over top of ham. Pour water on side, trying not to wash sugar off of ham. 

Cook on low for 4 hours.

Shredded Chicken Tacos

This reciepe I got from one of my groups on Baby Center. I did have to modify it a bit to feed more.


 Shredded Chicken Tacos

4 Cups Of Chicken Or Vegetable Broth
2 Packages of Taco Seasoning
3-5 Boneless Skinless Chicken Breasts
Tortillas.

Cook on Low 4 hours


**I added 30 extra minutes to the cook time since I used frozen chicken.**

Once Cooked Shred Chicken with juices. Use with soft taco shell/tortilla.

Pork Loin

Ingredients:
4-5lb Pork Loin. (did a little bit shy of 4)

1 teaspoon garlic powder or 2 teaspoons minced garlic (I did powder)
1 teaspoon onion powder or 2 teaspoons minced onion (I also did powder)
1 teaspoon Tony Chachere's Creole Seasoning (or chili powder)

2 Tablespoons soy sauce
2 Tablespoons Mustard
4 Tablespoons Worcestershire Sauce
2 Tablespoons Red Wine Vinegar
1/4 Cup Chicken or Beef Broth

**What is good about this recipe is that you could add Potatoes, Onions & Carrots in large chunks place underneath Loin. I was debating on doing but once again I was on a time crunch. I'll end up making some rice & baked beans to go with it.**

How I did it was placed the Pork Loin in the Crockpot & turned on warm. Little tip, place the pork loin fatty side up that way as it cooks, the fat will melt off & keep the meat tender, plus add that extra flavor. Then I mixed the dry spices together and sprinkled on top.
While still on warm, I mixed the wet ingredients in a separate bowl & pour it in. Be careful not to pour directly on top, but on the side, so the spices do wash off. Turn to either Low for 6-8 hours or High for 4-6 hours.

Chicken Parmesan


Ingredients:
1 (25 oz). jar spaghetti sauce
3-4 boneless, skinless chicken breasts
1 1/2 cups Italian bread crumbs
1 egg
1/2 cup milk
1/2 tsp. garlic powder
1/2 tsp. dried oregano
1/2 tsp. dried basil
2 tbsp. vegetable oil
1 cup (or more if you like) shredded mozzarella cheese
1 package of spaghetti noodles (for serving)

Spray slow cooker with nonstick cooking spray (or use a slow cooker liner).
Pour in jar of spaghetti sauce.



Get two shallow bowls. 
In one bowl mix egg & milk together. (Add salt & pepper to taste if you wanted, I ended up not)

In a second bowl, mix bread crumbs with garlic powder, oregano, & basil. 



Now you basically get an assembly line set up. Dip chicken in egg then roll it in crumb mix, and repeat with each piece. 

Add your chicken to a skillet & brown the chicken. I'm guessing 3-5 minutes on each side. Be careful NOT to cook. Your cooking will take place in the crockpot. 

Once you have browned each piece, place on top of sauce. Now the recipe called for 3-4 pieces, but we have a larger family so I did 5 pieces of chicken breasts. 

If you do it correctly it should all fit normally with just one layer. But with me I  layered mine.


Cover and cook on low for 6-8 hours or high for 3-4 hours.
Since I didn't time crunch everything I'm putting it on high for about an hour-hour and a half, then switching to low for the remainder which should be 4-5 hours. 

About 30 minutes before its done, you'll want to start cooking the noodles. 

And about 10-15 minutes before serving sprinkle your cheese on top. 

Serve over spaghetti. Enjoy!
